The weekend prior to Thanksgiving was the perfect time to workshop some of our favorite family dishes. My dad and I prepared a quiet sunday dinner together: stir fried eggs and green beans, an aromatic dish of leafy greens, and a lotus root and fish patty that accompanies rice perfectly. As delicious as the meal was, spending an evening with my dad in the kitchen was even better.

3. cooking the patty

with the mixture of lotus root and fish paste, scoop some out into a small ball to fit in the palm. the ball should be flattened out to a patty about the size of a hand. the patty measures approximately three inches in diameter and half an inch in thickness. making the patty is the messiest part of the cooking process. it should be cooked for a few minutes in the pan on high heat.
